Block 3 is the smallest on the estate and the stoniest: you can hear the flint under the tractor tyres. Sauvignon blanc loves it there, staying lean and bright even in a warm year.

We pick early in September, in the cool of the morning, and press straight away. It ferments slowly in steel, kept cold, and is bottled in the spring after, so it reaches you while it still smells of the vineyard: gooseberry, lime zest, cut grass, and that wet-stone finish.
